Pressing Cheese
Pressing the cheese is one of the important steps in making hard cheese, and acts to expel the
whey and to form the curds into a sold mass. The cheese basket, or hoop you use acts as a mold and
creates the shape of the cheese you are making.
In order to press the cheese you need to apply evenly distributed pressure, or weight to the cheese in the mold.
To do this you need a follower that will fit correctly on top of the cheese, inside the basket or hoop.
You then need to apply the correct amount of weight to the cheese.
The weight you apply will depend on the cheese you are making and in most cases you will start off with a
smaller weight and increase over time. While cheese making is a process with a certain science to it, it
is also an art, and your judgment and personal taste will play a roll in your cheese making, and this
includes pressing the cheese.
When you are first pressing cheese you are usually using just a kilogram or two of weight. This is easy
to do as you can simply save an empty milk bottle and then put one or two litres of water in it and use
it as a one or two kilogram weight, (like this).
The problem becomes obvious when you have to have a much greater weight,
as you cannot then use such a simple method.
A cheese press can be used to create much greater weights. Many of the hard cheeses you can make with
our "Hard Cheese Kit" require a final pressing weight of up to 22 kilograms.
It is not practical to use water bottles, books or other such items that are around your home. You
will need a press that can create this pressure mechanically.
The mechanical advantage of a "threaded" cheese press, means that while the handle still turns relatively easily, you may exceeed the required pressure. So to help prevent you "overpressing" your cheese we have had a 22 kilogram spring specially manufactured for Green Living Australia ... To fully compress this spring requires 22 kilograms of pressure ... if using Ricki Carrol's book this is the equivalent of 50 pound that is requested in her directions
When the spring is fully compressed the pressure applied is 22 kilograms.
Do not worry though, if your press
does not have this, as many presses do not have a way to tell what weight you are pressing at. This is OK,
as with experience, you can judge the pressure as you are tightening the press down, by a combination of
feel, and observing the whey start to flow.
There is an art to this, and you will get the hang of it, the more you make cheese.

22 Kilogram Pressure Spring
With the mechanical advantage of a thread, it can be difficult to not overpress your cheese, with too much pressure.
15 or 22 kilogrmas are frequently requested pressures for overnight application to hard cheeses. If you don't have weights that are convenient enough to sit on top of your cheese hoop, or basket and follower, this is a very easy way to get the job done.
You will know when the pressure is 22kg, simply because this specially manufactured spring will be fully compressed, and 15kg, or close enough is when the spring is approximately 3/4 compressed ... The main thing here is not to overpress your cheese

This cheese basket is ideal for hard and soft cheeses. For most soft cheeses you would not require a follower.
The cheese basket measures 145mm wide at the top, 130 wide at the base, and is 115mm high, and has a matching follower.

The 145mm hoops are made of pressure pipe, the same high quality piping that brings drinking water to the suburbs, and the matching followers are made of food grade HDPE.
WARNING:- Using storm water, drainage, or sewerage pipe to make your own hoops is potentially very dangerous, as the PVC used to make these pipes contains lead.

Hoops or Baskets ... ?
In regard to hoops verses baskets, Valerie uses the baskets for all hard cheese making, and uses the hoops for camembert, brie and all blue cheeses. The hoops are required for cheeses that you need to flip. It’s really just a personal choice to use the basket for hard cheese. It gives the shape Valerie is looking for.

When making mould ripened cheeses, such as Camambert, Brie, and Blue Vein Cheeses, you need to have what Valerie calls a "Cheese Hoop Sandwich"
These cheeses do not require pressing, the excess whey is expelled under the cheeses own wheight, but to do this evenly the cheese hoop, boards and all, need to be flipped periodically.
Also a board, and mat on its own is an ideal place to dry your cheese, before waxing.
We use bamboo sushi mats, and kiln dried raw pine planks cut to size. Both more than likely available locally. |
