This product replaces Pomona's Universal Pectin, which is also a low Methyl Ester pectin but ours is packed here in Australia.
Low Methyl Ester Pectin:
Low Methyl Ester is a pectin that needs the addition of calcium in the form of monocalcium phosphate to form a gel. The advantage in using this pectin over Classic Pectin or Jamsetta is that you do not need to add sugar in order to get it to set. You can add sugar to taste, which could be a lot less than in traditional recipes, or you could add an alternative sweetener, such as honey or stevia. I regularly use this pectin to make low-sugar jams with only 200 to 400 grams of sugar per kilogram of fruit, or no-sugar jams where I use stevia or xylitol instead of sugar with great results.
Calcium Water (monocalcium phosphate) Ca(H2PO4)2:
Monocalcium phosphate is a salt derived from minerals found in nature. Both calcium and phosphate are vital to our health and well-being. Calcium phosphate is essential for skeletal development and in fact, your bones are made of calcium phosphate. Calcium phosphate is also added to foods to boost their calcium content and used to make calcium supplements. In jam and jelly making it is used to add the calcium necessary to form a gel when using low Methyl Ester pectin.
How To Make Calcium Water:
The calcium powder comes with your pectin. Put 1/2 teaspoon of your calcium powder and 125 ml of filtered water in a small, clear jar with a lid. Shake well before using. Store in the refrigerator between uses. Calcium water lasts many months in the refrigerator and may be frozen for extended storage.

How Much Does it Make
50 gram pack: will make approximately 40 x 250 ml jars of jam.
250 gram pack: will make approximately 190 x 250 ml jars of jam.
1 kilogram pack: will make approximately 780 x 250 ml jars of jam.

Works perfectlyBy: Richard on 19 September 2024I have been looking to cut our sugar intake for some time and always have an excess of citrus fruit. Making marmalade always needs a lot of sugar and this is not good for our family. Having bought some cheese making items from Green Living I noticed that they supply LME Pectin. I bought a pack and made batch of Orange marmalade replacing 25% of the recommended sugar level with Xylotil and 2 tea spoons of LME Pectin, plus the same quantity of Calcium water. The mix gelled perfectly and tasted fine with no after taste or sugar taste. If you are aiming to cut your sugar intake I recommend this product and will continue to experiment with other citrus fruits.

Low Sugar PectinBy: Lorri on 4 August 2024This is the Jam! If you want to cut the sugar or use sweeteners rather than sugar give this pectin a go. Gives a great, fool proof set to jams, jellies and conserves. It is also great to add to fruit leather giving a softer leather that is easy to eat.

It worksBy: Ann on 9 January 2024I followed the peach jam recipe from your website but left out the walnuts. The recipe ingredients says 1/4 cup of water but then says use half a cup in the instructions so I used half a cup and my jam was too watery. It should have been 1/4 cup. It still turned out nice as I strained a bit of the liquid off and I ended up with tasty sugar free fresh peach jam. I’m happy and will buy the product again.

Thanks for the review. Different batches of fruit have different moisture content and the dry walnuts swell and absorb some of the water when they are added, but i agree the directions were a little confusing. We have edited the recipe to say "Up to 1/2 a cup of water", and now say; 3. Cut the peaches in half to remove the stones and then roughly chop them. Place your chopped peaches, along with the allspice into your preserving pan. Bring them to the boil, adding water as needed to ensure that the fruit does not stick to the pan and burn, and cook for fifteen minutes or until the fruit has softened.
Low Sugar Jam, yummBy: Anita on 24 October 2023I bought this product to try making low sugar jam and was a bit skeptical but wow what a lucky discovery. I now make jam with just 200 grams sugar per kilo fruit, it tastes amazing and I know will be much better for my family. This will be the product I use from now on.

low methylester pectinBy: mark on 29 November 2022I used the pectin with the peach jam recipe and just honey for sweetening, was actually brilliant , it set the jam ,no sugar every one loves it in the family, your website is so helpful with home made stuff , it's great
